How to make Salad with Broad Beans, Cherries, Kohlrabi and Halloumi

  1. 1. Cook the broad beans in salted water, let them cool and peel them.

  2. 2. Slice or cube the halloumi and fry in a dry pan until golden on each side. Remove from the pan.

  3. 3. In the same pan, toast the pumpkin seeds.

  4. 4. Grate the kohlrabi using a coarse grater. Pit and halve the cherries.

  5. 5. In a small bowl, mix olive oil, honey, lime juice, tarragon, salt and pepper.

  6. 6. Arrange the lamb’s lettuce on a plate, then top with broad beans, cherries, grated kohlrabi and grilled halloumi.

  7. 7. Drizzle with the dressing and sprinkle with pumpkin seeds.
