How to make Pizza-style bagel with egg, cherry tomatoes and spinach

  1. 1. Cut the bagel in half and place on a baking tray lined with baking paper.

  2. 2. Drizzle each half with olive oil, then add spinach on top.

  3. 3. Crack one egg into the centre of each bagel half. Then add halved cherry tomatoes, finely chopped onion, and sprinkle with grated mozzarella.

  4. 4. Bake in a preheated oven at 180°C for about 18 minutes, until the egg white is set (ideally the yolk should remain at least partially runny).

  5. 5. Season the baked bagel with oregano, salt, and pepper.
