  • Skyr, Icelandic yoghurt1× tablespoon (15 g)
  • Lamb's lettuce0.1× portion (10 g)
  • Dill, fresh2× teaspoon (6 g)
  • Oregano, fresh1× leaf (3 g)

How to make Courgette tortilla with tuna, cheddar cheese and vegetables

  1. 1. Slice the courgette into very thin slices (you can also use a grater or mandoline).

  2. 2. Arrange the courgette slices on a baking tray lined with baking paper in a rectangular or square shape. The slices should overlap so there are no gaps at the edges.

  3. 3. Brush the prepared courgette lightly with beaten egg and sprinkle grated cheddar cheese over the entire surface.

  4. 4. Bake in a preheated oven at 180°C for about 15–17 minutes.

  5. 5. Once the courgette tortilla is baked, let it cool slightly so the ingredients set and hold together.

  6. 6. On one half of the cooled tortilla, add skyr, lamb's lettuce, tuna and sliced tomato.

  7. 7. Fold the tortilla in half and sprinkle with chopped dill.
