How to make Pappardelle with Chanterelles, Chorizo and Cherry Tomatoes

  1. 1. Cook the pasta in salted water according to the package instructions.

  2. 2. Clean and dry the chanterelles. Peel the chorizo and slice it. Dice the onion and halve the cherry tomatoes.

  3. 3. Heat the olive oil in a pan, add the onion and chorizo, and fry for about 3 minutes.

  4. 4. Add the chanterelles and cherry tomatoes, and fry for another 3 minutes, stirring.

  5. 5. Season to taste with salt and pepper, and mix well.

  6. 6. Serve on a plate topped with chopped dill and grated Parmesan.
