How to make Protein Pancakes with Skyr and Raspberry Sauce

  1. 1. Mix the eggs and cream thoroughly.

  2. 2. Spread a small amount of olive oil on a heated pan, then pour a thin layer of the pancake mixture and fry briefly on both sides over high heat.

  3. 3. Meanwhile, heat the raspberries with erythritol in a saucepan until they break down and form a sauce.

  4. 4. Spread skyr over the cooked pancakes and fold them into triangles.

  5. 5. Pour the raspberry sauce over the top.
