  • 100% pistachio cream1× tablespoon (15 g)
  • Butter1× tablespoon (12 g)
  • Pistachio nuts, roasted and salted, weighed with shells0.5× tablespoon (9 g)
  • Honey0.5× teaspoon (6 g)
  • Erythritol1× teaspoon (5 g)
  • Vanilla extract2 ml

How to make French Toast with Vanilla Skyr, Pistachio Cream, and Nectarine

  1. 1. In a flat and wide bowl or on a deep plate, crack the eggs. Pour in the milk, erythritol, vanilla extract, and mix everything thoroughly with a fork or whisk.

  2. 2. Melt the butter in a pan. Dip the slices of bread in the prepared egg mixture and place them on the hot pan. Fry on both sides until golden brown (about 2 minutes per side).

  3. 3. In the meantime, slice the nectarine and mix the skyr with honey.

  4. 4. Serve the French toast topped with skyr and pistachio cream. Place the nectarine on top and sprinkle with chopped pistachios.
