How to make Cod in Leek Sauce with Soy Cream

  1. 1. Rinse and dry the cod. Season with salt, pepper, ground nutmeg, and lemon juice on both sides.

  2. 2. Cut the leek into half-moons.

  3. 3. Heat half of the olive oil on a pan, then fry the cod on both sides (about 3 minutes per side). Once the cod is browned, remove it from the pan and set it aside for a moment.

  4. 4. Add the remaining olive oil to the same pan and heat it up. Then, add the leek. Fry the leek on medium heat for about 7 minutes, stirring constantly.

  5. 5. Once the leek has reduced in size, pour in the soy cream. Bring it to a boil, then reduce the heat and cook for about 2 minutes. Once the cream has slightly reduced, add the cod back to the pan and cook everything together for another 4 minutes (you can flip the cod halfway through). Season with salt and pepper to taste.

  6. 6. Serve the dish garnished with freshly chopped dill.
