  • Spelt flour4× tablespoon (60 g)
  • Skyr, Icelandic yoghurt3× tablespoon (45 g)
  • Dark Chocolate3× cube (24 g)
  • Baking powder5× teaspoon (20 g)
  • Sparkling water20 ml
  • Semi-skimmed milk2× tablespoon (20 ml)
  • Erythritol2× teaspoon (10 g)
  • Sugar-free vanilla pudding, instant0.25× package (8.8 g)
  • Peanuts, plain0.25× handful (7.5 g)
  • Olive oil1× teaspoon (5 g)
  • Vanilla extract2 ml

How to make Maxi King-Style Omelette

  1. 1. In a bowl, mix together eggs, pudding (3/4 of the amount), vanilla pudding, baking powder, sparkling water, flour, and half of the erythritol.

  2. 2. Heat a pan and coat it with olive oil. Pour the batter into the pan and cook the omelette on both sides until golden brown.

  3. 3. Meanwhile, mix the skyr with vanilla extract and the remaining erythritol.

  4. 4. Melt the chocolate with the milk in a water bath and mix with the chopped peanuts.

  5. 5. Place the cooked omelette on a plate. Spread half of the skyr mixture on one half, then layer with the remaining pudding, and fold the omelette in half.

  6. 6. Drizzle the melted chocolate with peanuts over the omelette.
