How to make Lazy Dumplings with Skyr Dip and Fresh Berries

  1. 1. Separate the egg whites from the yolks. Whisk the egg whites in a metal or glass bowl, adding 2/3 of the erythritol, until stiff peaks form.

  2. 2. In a separate bowl or food processor, mix the cottage cheese with the egg yolks on low speed.

  3. 3. Add the whipped egg whites and flour to the cottage cheese mixture and gently mix until combined.

  4. 4. Sprinkle a work surface with flour and place the dough on it. Form a roll and cut it into pieces about 2-3 cm long.

  5. 5. Drop the dumplings into boiling salted water and cook for about 30 seconds after the water boils again.

  6. 6. Blend the remaining erythritol with skyr and peanut butter.

  7. 7. Wash and dry the fruits. Remove the green stems from the strawberries and cut them into smaller pieces (e.g., quarters).

  8. 8. Serve the dumplings with the skyr dip and fresh fruits.
