How to make Imperial Omelette with Fruit and Skyr

  1. 1. Separate the egg whites from the yolks carefully. Whisk the egg whites with a pinch of salt until stiff peaks form.

  2. 2. Mix the egg yolks with milk, spelt flour, and powdered sugar. Then, gently fold the beaten egg whites into the egg mixture until combined.

  3. 3. Melt butter in a heated pan, then pour in the egg mixture. Cook the omelette with a lid on, over low heat. Once it sets on both sides, flip it over and cook for a few more moments until golden brown.

  4. 4. Cut the cooked omelette into pieces in the pan using a plastic or wooden spatula (to avoid damaging the pan).

  5. 5. Arrange the omelette pieces on a plate, sprinkle with fruit, and add dollops of skyr on top.
