How to make Omelette Pizza

  1. 1. Slice the mushrooms and dice the peppers.

  2. 2. Heat olive oil in a pan and sauté the sliced mushrooms and diced red and green peppers. Add olives, tomato paste, and season with a pinch of salt, black pepper, and oregano. Stir occasionally. Once the vegetables are soft, remove them from the heat.

  3. 3. Separate the egg whites from the yolks and beat the egg whites until stiff peaks form (add a pinch of salt while beating).

  4. 4. Once the egg whites are beaten, add the yolks and mix on medium speed for a short time. Then, add the all-purpose flour and whisk until well combined.

  5. 5. Melt butter in a hot pan and pour in the egg mixture. Cook the omelette on both sides.

  6. 6. Once you flip the omelette, top it with the cooked vegetables and grated mozzarella. Cover the pan with a lid and cook on low heat until the cheese melts (this prevents the omelette from burning on the bottom).
