  • Halloumi, Cheese4× portion (80 g)
  • Avocado0.25× piece (37.5 g)

How to make Toast with avocado, roasted cherry tomatoes, halloumi and chives

  1. 1. Halve the cherry tomatoes and slice the garlic thinly. Place them in a baking dish. Drizzle with half the olive oil and season with a pinch of salt and pepper.

  2. 2. Roast the vegetables at 180°C for about 25 minutes. Remove and let them cool slightly.

  3. 3. In the meantime, scoop out the avocado and slice it. Slice the halloumi as well.

  4. 4. Drizzle the remaining olive oil on the bread slices and toast them in a dry pan on both sides.

  5. 5. Once the toast is ready, grill the halloumi on the same pan until it’s golden brown on both sides.

  6. 6. While the halloumi is grilling, spread the avocado on the toasted bread. Season with salt, pepper, and a squeeze of lemon juice.

  7. 7. Top the avocado with halloumi, then add the roasted cherry tomatoes and garlic.

  8. 8. Garnish with chopped chives before serving.
