How to make Pasta in peanut sauce with chicken, mushrooms, sesame, and sprouts

  1. 1. Cook the pasta according to the package instructions.

  2. 2. Finely chop the onion and garlic. Wash and dice the chicken. Clean and slice the mushrooms.

  3. 3. In a pan, sauté the onion and garlic in olive oil. Once the onion softens, add the chicken and mushrooms. Season with salt and pepper and cook for about 10 minutes, stirring occasionally.

  4. 4. Once the chicken is browned, add the coconut milk, peanut butter, lime juice, soy sauce, erythritol, and spices (cumin, ground coriander, and chili).

  5. 5. Heat the ingredients on low, stirring continuously until the sauce thickens slightly (about 5 minutes).

  6. 6. Add the pasta to the pan and mix until it is well coated in the sauce.

  7. 7. Transfer everything to a plate and garnish with sesame seeds and broccoli sprouts.
