How to make Toast with blood sausage, tartar sauce, and a fried egg

  1. 1. Heat half of the olive oil in a pan and sauté the blood sausage, breaking it up into smaller pieces, and cook until it completely crumbles.

  2. 2. Dice the pickled cucumber, finely chop the onion and dill.

  3. 3. In a small bowl, mix the skyr and mayonnaise. Add the cucumber, onion, dill (set aside a bit of dill for garnish), and seasonings, then stir well.

  4. 4. Drizzle the remaining olive oil on both sides of a slice of bread and toast it on both sides in a dry pan until it’s crispy and golden.

  5. 5. In the same pan, fry an egg sunny side up, leaving the yolk runny.

  6. 6. Spread the sauce on the toast, top with the crumbled blood sausage, and finish with the fried egg.

  7. 7. Garnish with the remaining dill.
