How to make White Asparagus with Egg, Ham, and Potatoes

  1. 1. Peel the asparagus using a vegetable peeler and trim off 2 cm from the bottom (the woody ends). Thoroughly wash the potatoes.

  2. 2. Cook the potatoes and asparagus in boiling salted water (cook the potatoes for about 20 minutes, and the asparagus for about 10-15 minutes).

  3. 3. Boil the eggs until hard (about 7 minutes). Once cooked, cool them down by placing them in cold water, then peel and cut them in half.

  4. 4. Arrange the drained potatoes and asparagus on a plate. Add the ham and egg halves beside them.

  5. 5. Drizzle the entire dish with olive oil and sprinkle with chopped chives and freshly ground black pepper.
