How to make Skewers with sun-dried tomato tartare and mozzarella

  1. 1. Prepare the sun-dried tomato tartare. Slice the zucchini into thin rounds and sauté in a heated pan with olive oil. Cook for about 3 minutes on each side. Finish by sprinkling with thyme and hot paprika.

  2. 2. Place the tomatoes, zucchini, and sliced shallot into a food processor. Blend until roughly chopped. Then, add the wine vinegar, balsamic vinegar, and chives, and blend until well mixed.

  3. 3. Spread the prepared mixture over the tortilla. Roll the tortilla, insert toothpicks along the length, and slice into bite-sized pieces.

  4. 4. Top each skewer with a piece of mini mozzarella.
