How to make Omelette with Smoked Salmon and Mushrooms

  1. 1. Crack the eggs into a bowl, season with salt and pepper, and whisk them.

  2. 2. Dice the onion, chop the chives, and quarter the mushrooms.

  3. 3. In a pan with olive oil, sauté the mushrooms and onion for about 5 minutes. Once they're done, remove them from the pan and set aside.

  4. 4. Pour the eggs into the same pan, add pieces of salmon, and cook covered until the eggs are set.

  5. 5. Transfer the omelette onto a plate and top it with the mushrooms and onion (if they've cooled down, throw them back into the pan for a bit to reheat).

  6. 6. Garnish the whole thing with chives.
