How to make Healthy berry buns

  1. 1. Prepare the yeast mixture. In a bowl, add crumbled yeast, sugar, and a teaspoon of flour. Pour in warm, but not hot, milk and mix thoroughly. Leave in a warm place for about 25 minutes to rise significantly (if it doesn't, you may need to prepare the mixture again).

  2. 2. Sift the flour into a bowl and add a pinch of salt. Mix well, then create a well in the centre and pour in the risen yeast mixture. With a large spoon, pull in the flour from the edges, mixing it with the yeast. After a while, add an egg and continue mixing, pulling in the flour.

  3. 3. Once initially mixed, transfer the dough onto a clean countertop or board, and knead by hand for about 10 minutes. After this time, while still kneading, gradually add melted and cooled butter. Continue kneading for about 5 more minutes.

  4. 4. Cover the prepared dough with a cloth and leave it in a warm place for approximately 1.5 to 2 hours. It should double in size during this time.

  5. 5. Rinse the berries and pat them dry. Mix them with erythritol and some cornstarch.

  6. 6. Once risen, transfer the dough onto a floured worktop or clean counter, kneading it briefly to get rid of any air bubbles. Divide the dough into 10 equal parts.

  7. 7. Shape each piece into an oval that's about 1 cm thick. Then, place a spoonful of the berry mixture in the centre of each piece and seal the edges of the dough firmly. Place the prepared buns a few centimetres apart on a baking tray lined with baking paper. Let them rise again for about 30 minutes.

  8. 8. Bake for 20 minutes in an oven preheated to 180°C.

  9. 9. Before serving, lightly dust with icing sugar for decoration.
