  • Pumpkin1× cup (116 g)
  • Beans, cooked or canned5× tablespoon (100 g)
  • Spinach, fresh or frozen4× handful (100 g)

  • Rapeseed oil1× teaspoon (5 g)

How to make Pumpkin and bean salad

  1. 1. Roast the pumpkin at 180C for around 35 minutes

  2. 2. Once the pumpkin has cooled, cut it into pieces

  3. 3. Chop the spinach and parsley, mix them with the beans and crumbled cheese

  4. 4. Combine the oil with the salt, pepper and juice from the lemon

  5. 5. Mix together all the ingredients.
