  • Sweet pepper4× slice (120 g)
  • Chicken breast, without skin100 g
  • Mozzarella cheese3× slice (45 g)
  • Onion3× slice (30 g)
  • Brown rice2× tablespoon (30 g)
  • Oil1× teaspoon (5 g)
  • Salt2× pinch (1 g)
  • Chilli powder1 g
  • Provencal herbs1× pinch (1 g)
  • Pepper, black1× pinch (1 g)
  • Rosemary, dried1× pinch (1 g)

How to make Aubergine with chicken and rice

  1. 1. Dice the meat then coat it in oil. Season with salt, chilli, Provençal herbs and pepper.

  2. 2. Place the meat and chopped onion in a heated pan and fry briefly

  3. 3. After a moment, add the pepper to the chicken and onion

  4. 4. Season with Provençal herbs and rosemary

  5. 5. Add a little water, cover and simmer

  6. 6. Cut the aubergine in half lengthwise, remove the inside and add it to the other vegetables and chicken

  7. 7. Fill the aubergine with the stewed filling. Place slices of mozzarella on top and put in a pre-heated oven (180C) for around 30 minutes

  8. 8. Serve the dish with boiled rice
