  • Asparagus10× piece (300 g)
  • Chicken breast, without skin200 g
  • Cream, UHT, half3× tablespoon (45 g)
  • Olive oil2× tablespoon (20 g)
  • Cheese, Parmesan, fresh2× tablespoon (20 g)
  • Butter1× tablespoon (12 g)
  • Sesame seeds1× tablespoon (10 g)
  • Salt1× teaspoon (3 g)
  • Pepper, black2× pinch (2 g)

How to make Chicken breasts on green asparagus purée

  1. 1. Wash the asparagus, cut off the hard ends (approx. 5 cm) and grill it in a pan with butter. Remove half of the asparagus spears early, when they are grilled but still slightly crunchy, and leave the rest to stew for around 5 minutes (they can be covered).

  2. 2. Blend the other half, the softer asparagus, into a smooth mass along with the seasoning, cream, and half of the parmesan.

  3. 3. Wash the chicken breast and slice it in half lengthwise into thin fillets. Season with salt and pepper and grill in oil in a pan.

  4. 4. Place the asparagus purée on a plate, then the chicken fillets on top and the grilled asparagus beside it. Sprinkle the whole with sesame, grated parmesan and freshly ground pepper.
