  • Graham roll1× piece (80 g)
  • Goat Cheese50 g
  • Skyr, Icelandic yoghurt3× tablespoon (45 g)
  • Beetroot30 g
  • Lettuce5× leaf (25 g)
  • Lemon1× slice (10 g)
  • Basil, fresh1× leaf (3 g)
  • Salt4× pinch (2 g)
  • Pepper, black1× pinch (1 g)

How to make Homemade chicken burgers with beetroot and goat’s cheese

  1. 1. Wash the chicken, dry it with a paper towel and cut off one or two pieces that will fit the roll without sticking out when the burger is prepared. Mix 1/3 of the skyr with the salt, pepper and basil.

  2. 2. Coat the meat in the seasoned skyr and bake in an oven pre-heated to 180C for approx. 15-25 min (depending on the thickness of the fillet). 2-3 min before removing the meat, slice the roll in half and place it in the oven.

  3. 3. Spread the rest of the skyr, mixed with lemon juice and seasoned with salt and pepper) on both halves of the lightly toasted roll. Lay the lamb’s lettuce on one of the halves, then the roasted chicken, goat cheese and beetroot slices (raw or boiled), then cover with the other half.
