  • Skyr, Icelandic yoghurt2× tablespoon (30 g)
  • Sweetcorn, canned or frozen1× tablespoon (15 g)

How to make Shakshuka with beans, sweetcorn and skyr

  1. 1. Fry the tomatoes and the finely chopped onion and garlic in a pan. Fry for around 5-7 min.

  2. 2. Once the water from the tomatoes has almost boiled away, add the sweetcorn, beans and seasoning, then fry for another 2-3 minutes.

  3. 3. Break the eggs on top, lower the heat and cover the pan with a lid. Stew until the egg white sets (the yolk should remain liquid). Note: this could happen very quickly, so observe how the eggs are behaving.

  4. 4. Serve the shakshuka with skyr.
