  • Water2× cup (500 ml)
  • Old potatoes1.5× portion (270 g)
  • Chicken breast, without skin250 g
  • Mixed vegetables, frozen, boiled in salted water1× portion (200 g)
  • Gherkins, pickled, drained3.5× piece (122.5 g)
  • Cream, UHT, half7× tablespoon (105 g)
  • Olive oil1× tablespoon (10 g)
  • Salt4× pinch (2 g)
  • Bay leaf, dried1× leaf (2 g)
  • Pepper, black1× pinch (1 g)

How to make Cucumber soup with meat and potatoes

  1. 1. Peel, wash and dice the potatoes. Add to the hot broth and boil until soft

  2. 2. Wash the chicken breasts, and cut them into small pieces along the grain. Fry in a pan in heated olive oil. For 4 minutes on each side. Add to the broth

  3. 3. Peel and finely grate the cucumbers. Add this to the broth too

  4. 4. Boil the soup on a low heat for 10 minutes

  5. 5. Before serving, add the cream and stir. Do not bring the soup to the boil

  6. 6. Vegetable broth

  7. 7. Finely chop the vegetables and pour cold water over them

  8. 8. Add the salt, pepper and laurel leaf.

  9. 9. Cook on a low heat for 2 hours

  10. 10. Once cooked, add salt to taste and drain through a sieve
