  • Chicken breast, without skin250 g
  • Old potatoes1× portion (180 g)
  • Leek1× piece (140 g)
  • Lemon1× piece (80 g)
  • Cream, UHT, half2× tablespoon (30 g)
  • Butter3× teaspoon (15 g)
  • Salt4× teaspoon (12 g)
  • Wholemeal flour1× teaspoon (8 g)
  • Thyme, fresh2× leaf (6 g)
  • Pepper, black1× pinch (1 g)

How to make Chicken breasts with stewed leeks and mashed potato

  1. 1. Cut the green parts off the leek, leaving the white and light green section. Slice it into four pieces lengthwise, and rinse thoroughly. Slice it laterally into half-centimetre pieces.

  2. 2. Heat up 1/4 of the butter in a pan, add the leek, season with salt and half of the thyme, then fry on a medium heat for about 5 minutes, stirring from time to time. Next, cover and simmer for another 10 minutes until the leek is soft and glazed.

  3. 3. Wash and slice the chicken breast. Season with salt, pepper and half of the thyme, then coat with flour Heat up 1/4 of the butter in a pan and fry.

  4. 4. Pour half of the cream in with the leek, and bring it to the boil on a low heat. Place the chicken on the leek, cover and simmer for another 2 minutes. Sprinkle with lemon juice.

  5. 5. Boil the potatoes in salted water. Drain then mash with the rest of the butter and cream.
