  • Water3× tablespoon (30 ml)
  • Sugar, white2× tablespoon (24 g)
  • Wine Vinegar1× tablespoon (20 g)
  • Ginger, fresh4× teaspoon (12 g)
  • Lettuce2× leaf (10 g)
  • Olive oil1× tablespoon (10 g)
  • Pepper, cayenne, ground5× pinch (5 g)

How to make Tuna steak with mango

  1. 1. Prepare the glazing. Pour the grated ginger, water, lime juice (3/4 of the amount in the recipe), rice vinegar, sugar and chopped chilli pepper into t saucepan and boil for a few minutes until a sticky glazing forms.

  2. 2. Season the tuna with salt and pepper, rub it with olive oil and place it in a well heated grill pan. Grill for 30 seconds on each side (the tuna should stay pink inside), then place on plates laid out with lettuce, and pour on the glazing.

  3. 3. Grill the sliced mango on both sides in the same pan as the tuna. Season it with salt and pepper and lay it on the plates with the tuna.

  4. 4. Drizzle with lime juice (1/4 of the amount in the recipe) and sprinkle with coriander.
