  • Coconut milk1.75× cup (402.5 ml)
  • Tofu cheese10× tablespoon (200 g)
  • Tomatoes cherry2× handful (200 g)
  • White rice basmati0.75× cup (135 g)
  • Limes50 g
  • Spinach, fresh or frozen2× handful (50 g)
  • Curry paste1× tablespoon (25 g)
  • Olive oil2× tablespoon (20 g)
  • Soy sauce2× tablespoon (20 g)

How to make Vegetarian green curry

  1. 1. Boil the rice according to the instructions on the packet.

  2. 2. Dice the tofu. Start frying the curry paste and tofu in olive oil in a pan.

  3. 3. Once the tofu is lightly fried, pour the coconut milk over everything, then add the cocktail tomatoes sliced in half, and the spinach, and boil for around 5 minutes. Add soya sauce to taste.

  4. 4. Serve the rice and curry sauce garnished with the finely chopped chilli pepper and a lime quarter.
