  • Tomato6.5× slice (130 g)
  • Groats3× tablespoon (45 g)
  • Olive oil1× tablespoon (10 g)
  • Herbs and spices2× teaspoon (4 g)

How to make Courgettes stuffed with couscous

  1. 1. Wash the courgette, slice it lengthwise and remove the flesh.

  2. 2. Place the courgette in an oven preheated to 180C for 20 minutes.

  3. 3. Cover the couscous with boiling water, set aside for 5 minutes until it swells, then stir with a fork.

  4. 4. Finely chop the flesh from the courgette, put it in a saucepan and add a small amount of water. Cover and stew on a low heat for 3-4 minutes.

  5. 5. Peel and chop the tomatoes, and add them to the courgette.

  6. 6. Season with pepper and oregano, add the olive oil and mix.

  7. 7. Add the couscous to the vegetables. Mix everything together.

  8. 8. Removed the baked courgette from the oven, stuff it with the filling and put back in to bake for another 5 minutes.
