How to make Potatoes with pumpkin, almonds and dried fruit

  1. 1. Peel the potatoes and pumpkin, dice them and boil for 7 minutes in salted water.

  2. 2. Heat up the oil in a deep pan, add the potatoes and pumpkin.

  3. 3. Season with salt and pepper, mix and fry for 5 minutes on a high heat.

  4. 4. Reduce the heat to low, cover the pan and stew for 10-12 minutes until the vegetables start to turn brown (add a little water if necessary).

  5. 5. Roast the almonds in a dry pan, chop up the dried apricots.

  6. 6. Add the almonds, apricots and raisins to the potatoes and pumpkin.

  7. 7. Mix everything together and sprinkle with coriander.
