  • Courgette1.2× piece (300 g)
  • Onion1× piece (120 g)
  • Cream 30 %3× tablespoon (75 g)

  • Feta cheese5× cube (10 g)
  • Dill, fresh2× tablespoon (10 g)
  • Olive oil1× tablespoon (10 g)
  • Garlic1× clove (5 g)
  • Turmeric, ground1× teaspoon (2 g)

How to make Courgette, potato and feta soup

  1. 1. Glaze the diced onion in olive oil and butter in a pan, on a medium heat for about 5 minutes, stirring frequently.

  2. 2. Add the peeled and finely diced potatoes and stir in. Fry together for approx. 2 - 3 minutes, stirring frequently.

  3. 3. Add the grated garlic, pour in the broth and bring to the boil. Meanwhile add the turmeric, pepper and, if necessary, salt to taste.

  4. 4. Next boil the soup for around 2-3 minutes, then add the courgette, diced into pieces slightly larger than the potato. Boil for around 8-10 minutes.

  5. 5. Remove from the heat, add the dill and cream. Serve with feta.
