How to make Vegan mango and vegetable curry

  1. 1. Dice the vegetables and mango.

  2. 2. Fry the onion and curry paste in heated oil.

  3. 3. Once the onion is glazed, add the peppers and courgette, and fry together for another 3 minutes.

  4. 4. Pour in the broth and coconut milk, then bring everything to the boil.

  5. 5. Add the tomato concentrate, salt, pepper and boil together for 5 minutes.

  6. 6. Finally add the mango, stir in and serve.
