How to make Aubergine with tomato and camembert

  1. 1. Wash then slice the aubergine lengthwise.

  2. 2. Heat half of the oil in a pan and fry the aubergine until it turns light brown.

  3. 3. Slice the tomatoes and Camembert.

  4. 4. Wrap the tomato and cheese in the aubergine, skewer with a cocktail stick to stop it unwrapping.

  5. 5. Fry in the rest of the olive oil until the cheese melts.

  6. 6. Remove from the pan and garnish with fresh mint.
