  • Vegetable broth3× cup (720 g)
  • Leek1× piece (140 g)
  • Feta cheese5× slice (100 g)
  • Cream 30 %6× teaspoon (72 g)
  • Butter1× tablespoon (12 g)
  • Chives, fresh2× tablespoon (10 g)
  • Olive oil1× tablespoon (10 g)
  • Garlic1× clove (5 g)
  • Turmeric, ground1× teaspoon (2 g)

How to make Courgette cream with feta

  1. 1. Peel the courgette, then cut off the ends and slice it.

  2. 2. Clean the leek carefully, cut the dark green ends off. Slice the white and light green parts

  3. 3. Melt the butter in a pan with the olive oil, add the grated garlic and leek. Fry for around 4 minutes, stirring frequently.

  4. 4. Add the courgette and fry for around 3 minutes, stirring frequently..

  5. 5. Add broth and bring to the boil. Add the turmeric. Season with salt and pepper then boil for approx. 15 minutes.

  6. 6. Blend the soup with the cream.

  7. 7. Serve with crumbled feta and chives.
