How to make Mexican quinoa stir-fry

  1. 1. Pre-heat the oil in a large pan, add the pressed garlic and half of the finely chopped chilli pepper, then fry for 2 min.

  2. 2. Add the unboiled quinoa, 1/2 glass water and the seasoning, then stir.

  3. 3. Add the tinned tinned tomatoes, beans and sweetcorn. Mix together, cover then boil for around 25 min.

  4. 4. Remove the lid, stir and add the sliced avocado, then drizzle with lime juice.

  5. 5. Sprinkle on the other half of the chilli pepper.
