  • Wholemeal bread2× slice of bread (70 g)
  • Butter5× teaspoon (25 g)
  • Lemon0.5× slice (5 g)
  • Pepper, black1× pinch (1 g)
  • Basil, dried, ground1× pinch (1 g)
  • Salt1× pinch (0.5 g)

How to make Toast with egg, avocado and sauce hollandaise

  1. 1. Beat the yolk until frothy with the lemon juice, salt and pepper added. Gradually add the hot, melted butter while beating. The sauce should be thick and fluffy with the consistency of mayonnaise.

  2. 2. Wash and slice open the avocado, remove the stone and skin. Slice the flesh.

  3. 3. Toast the bread in a pan or toaster. Lay it on a plate, arrange the avocado on top and season with salt and pepper.

  4. 4. Bring some salted water to the boil in a medium pan around 10 cm deep. When the water is boiling, reduce the heat to medium and form a swirl by stirring with a spoon.

  5. 5. Break the egg into a bowl (1 egg - 1 bowl) then pour gently into the spinning water. Boil for around 2 - 3 minutes until the white has set and the yolk is still soft.

  6. 6. Remove the eggs from the water (preferably with a slotted spoon) and lay it on the avocado, add salt and pepper. Pour hollandaise sauce over the eggs and sprinkle with basil leaves.
